Mac Pro Optical In to Analog Out

My Xbox 360 is plugged into the TV via HDMI. 95% of the time I am using my Mac Pro HDMI to the TV with audio 1/8"-->RCA to my Active M-Audio speakers.

Since I don't want to use the TV Speakers, can I use Optical OUT from Xbox to Optical IN on Mac Pro and have the mac pro direct the audio out to 1/8"? Is there software that will do this with minimal latency?
