I have a mac mini server running mountain lion. It running a a few services we use internally. I also use it to connect to my home network from work and also some bit torranting. So on my router it is the one device that is connectable to the outside world. I would like to set up a camera so the wife & I can spy on our dogs while we are at work. I was thinking of a ip camera will this interfere with the server setup?

Security camera won't interfere with your server. You an use apps such as EvoCam to save images / videos to your server, and view them remotely.
