Can a Mac server be used as a rack mounted desktop or is there something in it's BIOS that indicates that it is a server and won't allow the desktop OS to load?
Yes, there is a reason for making a server into a desktop, rack mounting.

    Thanks in advance!

you can turn any mac into a server, and yes, once you have the server software installed, you can still use it as a regular mac.

macs do not have BIOS... and any mac can be made into a server. I would however recommend either the mac pro server or mac mini server...
