Raw photos on my Apple Mac - how to use them in Adobe Photoshop 2021 on my new PC? Files are not recognised, really annoying and very confused!!!

The old and out-of-date Ps 2021 bundles with an old and out-of-date Adobe Camera RAW (ACR). That "antique" software can't read newer RAW flavors generated by newer cameras. If you update to the newest release of Ps 2022 (v23.1...) you'll likely find that it can read your RAW files. If not, Abobe will likely have an update to ACR in the near future that will. ACR gets updated frequently to add support for newer cameras/phones/... .
