I am in the process of switching from Mac to PC but have a few drives with stored stuff that I really want to keep, is there a quick easy way to connect those Mac drives to a new PC so as to have access to the information that they contain ?
There are plenty of commercial software options that enable the ability for Windows to read / write to HFS or APFS drives. Here’s one that seems to be good: https://www.paragon-software.com/home/apfs-windows/ I haven’t been able to find a free alternative… Maybe someone else knows of one?

I highly recommend going with @maflynn 's suggestion. I've used Paragon Software's products in the past and while they are generally solid and reliable, I've had a few head-scratching situations arise that I could only attribute to their software.
But more importantly, if these are external drives, then you'll want the flexibility to be able to easily attach them to other systems that don't have the Paragon Software drivers installed.
