The 8 core has the thermal sponge that connects the heatsink to the case. I’m sure it’s Not fitted to the 7 core, possibly to differentiate between the models benchmark performance.
The M1 heat pad mod discussed in another forum rectifies this and gives the 7 core the equivalent performance to the M1 Pro

But the extra 'electrons' are on the 7 core... and that is lighter, or I don't know enough about electrons.
I think they disabled the 8th GPU core by fusing the track so the electrons can't gain access. Another possibility is that the screen on the 7 core had the brightness setting turned up allowing more photons to escape and lowering the overall mass.

You're talking about 10g difference in weight - that could be due to a difference in the amount of cooling paste used between the CPU and heatsink. It's really nothing to even be concerned about.
10 grams of cooling paste? I very seriously doubt that.

It was just an observation / interesting - not concerned. I had both briefly.

Now only have 7 core, 10g grams less weight was too much to give up as I have it on my lap for 8+ hours a day, my legs thank me for it 😜
