I've read the various posts about overheating in MacBooks, I've installed Fan Control and Temperature Monitor, but I'm still in the dark as to how hot is too hot?

I've seen that some people have had luck bringing down their CPU temperature by scraping off excess heat sink grease from their processor chips. That sounds a bit daunting to me.

    Any thoughts on operating temperatures?

180F Internal on my Powerbook was not good according to El Genius Bar

that Powerbook hit 192 without shutting down, but it has numerous logic board issues.

Mine has never gone over 70 C (158 F). Even then it has only reached that high under extreme processor and graphics card load.

    I run a Macbook Pro C2D.

Yes, that Powerbook has had so many issues that I have had to buy a MacBook Pro well I let Fry's Service Department attempt to fix it.

But I'm Much happier with my MBP its at 160 though, which considering it's on a blakent and it's the 17", I would say it's acceptable.

The Macbook/iBook and Powerbook/MacbookPro have had different levels of heat issues.
