On Apple's web site it says the the maximum resolution that the MacBook will handle is 1920 x 1200, my question is.. Will the MacBook actually be able to go bigger then that (and Apple is just putting that because that is the largest screen they make that it will run)?

I think the technical limit of DVI is 1600x1200 but with a bit of tweaking it can be pushed to 1920x1200. That's going to be it unless you hook it up to an old CRT with ultra high res. VGA supports 1600x2000 or something like that.
