I haven't read the whole thread, but have you tried a backup explorer? When I still synced my phone to my computer I had a program that would read and open backups and the content within them. Just a thought.
 
You'll still need iTunes to get your music back though, yes? Sounds like you also store music locally on your phone like I do. I like having it on my phone instead of having it in the cloud and relying on an Internet connection in order to listen to my music. Even with unlimited data, I'm not totally comfortable wit
I like having my music actually stored on my device. It's one of the reasons I buy the phones with more storage. I just don't like relying on the cloud for my entertainment needs.

Instead of using Parallels, use VirtualBox. Its free and open sourced. http://www.virtualbox.org/

I use it with a Windows 7 Install, a Windows 8 Install, and a Windows 10 Install. It should definitely work to do what you want. Also, Boot Camp would too.

I have heard too many issues with Apple Music and I also don't trust my Photo Library in the cloud. I have my mp3 and aac collection still from the late 90s when MP3s first went mainstream for ripping CDs. My library is too big to organize and iTunes Match and iTunes itself has not been good with identifying duplicates in the library with all these live shows I have.

I have an Apple Music subscription. I downloaded a few songs from Soundcloud and a couple albums elsewhere and they synced to the cloud without "iTunes Matching", then I could decide whether to download it to my phone or not. Maybe because these songs are not available on Apple Music. However, I'm pretty sure if you have albums that are available on Apple Music then they will duplicate. With your high-quality music collection, I honestly do not think you will find the same quality on iTunes. Currently I have 50GB iCloud storage and sync my iPhone and iPad backups in the cloud, so I only need to connect my phone to my laptop for syncing photos, which for some reason I haven't "clouded" yet, and this happens around every 4-6 months. It's super convenient not having to worry about syncing and I use iTunes primarily for music listening.

Also, about the VirtualBox, I completely agree with you. Good alternative to Parallels. I personally use Bootcamp so that my Macbook's hardware are dedicated fully to Windows 10 and it runs so smoothly.
 
Buy iCloud a upgrade with enough space for the backup until you buy a new Mac, backup a on iPhone 6, restore iPhone 7.
 
Makes you realize again how convenient the cloud is. I have an iCloud backup of my iPhone, but I don't even need it because as soon as I log in with iCloud on a new device (iPhone or even a Mac) I get ALL my photos, music, Safari bookmarks, email and now even documents with the Sierra update on Macs.

I do realize this is not for everyone, but sometimes it's possible to convert anyway even if it comes with a few downsides. I had to reorganize my photos and some music wasn't compatible but I don't regret it one bit.
 
Why don't you download the trial version of parallels and a trial version of windows 10 and check it yourself? Doesn't cost anything and then you will know for sure.

This was my initial plan; however, when I called parallels support to ask a few questions they told me that I had to use parallels 10. The problem with that though is that there isn't a trial available (at least that's what they told me). They also told me that there is only a trial available for the latest version (12 I believe), but that version won't work with my computer.

Once you have the funds to get a new computer or if u do and you're just waiting for the new mbp, you can flip this for a decent loss.
That's an interesting idea. I had considersd purchasing a mini a while back to use as my Plex server. Maybe I could kill two birds with one stone.

You can do that with Apple Music/iCloud too. It let's you download the Music for offline listening.

I think I may try this as this might be the easiest (and cheapest) way for me to accomplish this. I guess all I need to do it install VirtualBox and Windows and then install itunes for Windows, correct? Then I can somehow point Windows iTunes to my iTunes database that I have on my Mac?

Well you will still need to install Windows 7 or another version of Windows on VirtualBox, so you need a full install of that. Also, you will need to copy your iTunes library over and your backups I believe. There are articles online that show how to transfer, but they are older, but it should still work.
 
Just a shot in the dark, you might want to try a third-party application to transfer your data and manage your iPhone, like AnyTrans (would be the best choice, but requires OS X 10.8 at least) or iMazing 2 (requires OS X 10.7 at least) etc.
Worth a try before buying a computer.
Trying imazing now but getting a failed connection message when I connect my iPhone 7. It sees my iPhone 6 just fine though.

And it looks like imazing won't work for me either. Just heard back from their tech support and they informed me that 10.7 isn't compatible with ios10. You should be able to grab it from here... no idea what happens when you try to install on old osx though.

VirtualBox is free but I don't know if it runs on OSX. Ideally you Mac is at lest 4GB.

I have 4GB of RAM. I might as well give it a try since there doesn't seem to be any other way for me to do this.
