I have an LG B7 that I used to hook up to an Intel MacBook a few years ago and used it with no problem.

I now have an M1 Air and today I tried connecting it for the first time using a USB-C to HDMI cable. The weird thing is that the MacBook display settings show the LG TV as an external display with all the options (set as main, mirror, extended) and resolution options, etc. However, even after trying several HDMI inputs on the TV I get “no signal” displayed on the TV. Any idea what might be going on? Do I have some setting wrong somewhere? Is this a potential software issue with the OS?

What brand USB-C to HDMI cable are you using? What are the USB and HDMI specifications supported? Do they match the supported HDMI specifications of your TV's inputs?

Says it supports hdmi 2.0, which is what the LG has.
 
When connected via HDMI, the LG TV resolution in Settings > Displays must be set to a resolution supported by your TV.
 
It was set to the full 4K resolution so it should have been showing up, yeah? I doubt it was set to anything other than either 4k or 1080.
