The CPU is BGA-soldered to the logicboard, so an upgrade is not that easy. The MBP 2.1 logicboard should be the same layout, but i am not that sure about all the connectors.
 
Thank you for your answers :) !! , after some research the only "big" difference between the two motherboards would be that the 2007 has an additional FireWire port. Do you think I can remove it and keep a fonctional motherboard ?

Uhm, I'm sorry - had to check it (it's my mom's computer) and it has been downgraded from Macbook Pro 3,1 to 2,1, not 2,1 → 1,1. Sorry for the disinformation.

I dont know if it would even fit the case and cooler but the 2008 model is far superior and they made a revised gpu chipset which is reliable and would happily run dosdude catalina
 
finally, it is a MacBook Pro 4.1 early 2008 that I recovered. Yes, because I always use Snow Leopard and Rosetta ... ArticFox and Pages 09 always serve me ^^
