I was thinking of getting the 16GB RAM to make it future proof

Future proof due to what. Unless your usage drastically changes and becomes more demanding in that you start doing photo or video editing regularly or use virtual machines you won't need more then 8GB. your use seems to be pretty minimal. I still use my Mac Mini after 4 years with 8GB of ram and it's still going strong. From my experience OS X tends to be a lot better optimised and uses RAM more efficiently then Windows. You shouldn't need more then 8GB.
