All puns aside (I'd go for the 30 min one):

Get the 2.8GHz MBP. In gaming you want the most possible, video editing and encoding are hard hitters on the processor. Also, since you have a 5-year old PB, then its logical for you to want to have this new MBP for another 5 years. So, to a 5 year outlook, I'd say future proof it as much as possible and a 2.8GHz CPU is a good way to future proof your new baby.

Other than that, I rest my case.

But be aware that the quality of the current hardware is far, very far away from you powerbook I wouldn't plan the expense on a 5-year period.
 
Get the 2.53ghz, the difference is almost zero unless you live off number crunching/rendering all day to save you a minute or two at most inbetween projects.

And a mac pro would better suite you if number crunching/rendering is your priority.

Also 5 years from now, will a 2.8ghz or a 2.53ghz mbp be that much of a difference when either way you'd want to upgrade to a whole new beast? I rest my case. =D

I currently have a 2.53 unibody.

I sometimes do small revisions to uncompressed 10bit video files on FCP. Not hardcore editing. Wasnt too happy with the performance (may have been the 5400rpm drive though).

In a co-incedence, I got a DOA on my machine and have decided to go the 2.8 I think for the extra $400 at least I've got the top of the line.

Using iStat, I do sometimes see the processor graphs top out when encoding- would love to have that extra .270 Ghz so looking forward to the 2.8 when it arrives next week!
