The hard drive is sounding like it will die at any moment, it's an Hitachi 250GB HTS723225L9SA62. Can I just replace it with any 2.5inch SATA drive?

Yep... it is just a standard 2.5" laptop drive.

get something reasonable that you can take with you to your next laptop (as an external drive).

you don't want to stick too much money into a laptop with the 8600...
