Compared to external displays on the same machine or previous MacBook Pro with Retina display, the 2016 MacBoom Pro displays these grids in a funny way, especially when you move them around. Anyone know what changed about the display to cause this? This is at native resolution.

What resolution are you using on the new machine? If you're using one of the scaled resolutions (versus the "native" 2x2 pixel doubling unscaled mode), you may see some artifacts with very tiny details or repeating patterns.
 
You're right. I discovered of the 5 default sizes the OS presents, on the old MacBook Pro w/ Retina display (2012) it uses the middle one as default. On new 2016 it is using the 4th one as the default of display resolution.

Would have never expected two identical displays have different defaults.
