At present I am using a Macbook Pro mid 2012 2.3Ghz i7 with 16GB ram and a 1T SSD.

Apart from social media I use it for photo editing with either Lightroom or ON1 and find the 16GB ram adequate, the only down side is the 15” screen and ideally I would like something larger.

I recently picked up a used iMac late 2015 retina 4k with 8GB ram and a 1T spinning drive to see how I would get on with the larger screen, the screen I am getting used to but it is so slow with only 8GB which I can’t increase, so it will be for sale soon!

Options for a larger screen appear to be another iMac with better spec (expensive) or an external monitor, which I can connect to my Macbook.

Has anyone tried connecting an EIZO ColorEdge CS2420 24 Inch IPS Monitor to an old Macbook, is it straightforward to connect, do I need any fancy cables or software?

Pretty straightforward, this monitor has displayport input, you would need a minidisplayport to displayport cable. Use the thunderbolt port on you MBP (it's displayport also) to connect to the monitor.

I have one question, do you require that high end of a monitor for your work? I am a full time freelance photographer and I understand the Eizo is a 100% AdobeRGB monitor, but I have used monitors that are not, and properly calibrate them with Datacolor Spyder devices. As an example my current monitor is a 25 inch Asus PB258Q which I really like. It's a 2560 x 1440, 100%sRGB, 73% AdobeRGB and the extra resolution compared to the Eizo 1920 x 1200 is nice to have.
 
To be honest I didn't know that the EIZO was high end, it was just a manufacturer that was mentioned to be as being pretty good.
I didn't initially noticed that it was 100% AdobeRGB and my club tend to use sRGB so I guess that I should be looking around at other monitors but thanks for confirming that it is fairly straightforward to connect.
 
I am also a professional photographer and I would recommend getting 99% AdobeRGB Monitor if you want to do serious photography work. But I guess it somewhat depends on the kind of photography you are working on. For product photography or high end fashion for example I‘d want to make sure that I work with very accurate colors, but for sports for example its perhaps a bit less important..

I personally work with an Eizo ColorEdge CS270, calibrated with an Xrite i1 Display Pro colorimeter, but using the Eizo Colornavigator 7 software For the Eizo display (and the i1 software for my MBP display). But if I were looking to buy a new monitor today, I would probably buy a BenQ display instead, as they seem to be very high quality but with a much lower price tag then the Eizo displays... Personally I have been looking at an SW271 which is a 27” 4K display with 99% AdobeRGB but if you want a cheaper option, perhaps you should take a look at the SW240 (https://pricespy.co.uk/computers-accessories/monitors/benq-sw240--p4837129)

I have 2015 13" MBP connecting with EIZO CG246 via Mini DP--DP cable (Eizo provided in package), 2019 16" MBP with EIZO CG 279X Via USBC Cable by Eizo too, both works with no any problem.
