After investing in Apple's HomePods, when released, I was disappointed that macOS did not natively support "stereo HomePod pairs." So after several releases of macOS, leading up to BigSur macOS 11.01, that is still the case. The worst part of this lack of capability is that is never mentioned when purchasing Apple HomePods. So I ask, what is someone to do?

I didn't know this. Why would it not be supported? Have they stated a reason? Seems really strange.
Dunno to be honest. As HomePod stereo pairing became real with the release of AirPlay2, I would guess that AirPlay2 is not fully supported in macOS. HomePod stereo pairs are supported in the Music and TV applications which are AirPlay2 compliant.
