These screen saver / wallpaper combos look great from a distance but they're not retina sharp, which makes sense as it would make them prohibitively huge in file size.

But unfortunately it does make them noticeably blurry when they're paused in the “wallpaper” state on a Studio Display.

It’d be great to be able to set the four Tahoe scene wallpapers to automatically reflect the time of day. There doesn’t seem to be a neat way of doing it at the moment without messing with plists

On wikipedia the default is the abstract for all since Big Sur.
Those are just the standard wallpapers used for branding or marketing. It doesn't mean that they're the defaults.

How does Apple have the best aerials in the business and the least creative default wallpapers.

Ever since Sonoma, the default wallpaper on a clean install or new user profile has been the landscape/aerial ones. I just spun up brand new VMs to confirm. In Tahoe, the abstract one isn't even included as a built-in or stock wallpaper. It needs to download when it's selected for the first time.

If you’ve previously set an Aerial screen saver in macOS Big Sur or later, upgrading to a newer version like Ventura, Sonoma, Sequoia, or Tahoe will keep your Mac set to an Aerial screen saver, typically the first one available, and its matching nature-themed wallpaper, preserving your preference over the default abstract wallpaper a clean install might display.
Big Sur, Monterey, and Ventura don't have aerial screensavers; they were added in Sonoma. In my experience, if I'm using the default one, then macOS will use the new default one after the upgrade. If I'm not using the default one, then macOS will keep using the current one after the upgrade.

As an example, when I set my Sequoia VM to use the abstract wallpaper and upgrade to Tahoe, Sequoia's abstract one remains as my wallpaper in Tahoe. When I set my Sequoia VM to use the default wallpaper (Sequoia Sunrise) and upgrade to Tahoe, then Tahoe's default wallpaper (Tahoe Day) is set after the upgrade.

Someone already confirmed this, but thanks for double checking. That is good news, as the aerial screensavers feature is great. They should align the marketing with them, and forgo those Playskool background images.
 
The last landscape dynamic wallpaper was Big Sur. Then they switched to abstract dynamic wallpapers including in Sequoia
The feature name I mean, not necessarily the content. Though, at least in Sequoia, the Big Sur and Catalina non-abstract dynamic wallpapers are still there. The Aerials are a superior feature anyway IMO. Apple may be more focused on that feature from positive feedback about it?
 
Who on earth came up with the term tea gardens for these screensavers? They are clearly tea plantations.
Because that's what they're called - tea gardens/estates. Look it up. I was hoping to see something in this new batch from Darjeeling (my favorite place on earth), but oh well.

Corresponding screensavers are a separate thing not tied to dynamic wallpapers. As you can see in your screenshot, not all of them have it.

But dynamic wallpapers were initially all landscapes starting with Catalina, until they changed them to abstracts starting with Monterey

Aerials are an import from Apple TV. Dynamic wallpapers are native to macOS
 
As a side note: How come downloading these wallapers/screensavers take so long? I have a very fast internet connection but it takes at least 15 minutes or so to download one wallpaper. And it's so annoying that you can't switch windows because then the download aborts and the progress isn't saved. This whole process is rather cumbersome.

Also, I wish they'd add more scenes from Europe, European cities.

I don't think that switching windows aborts the download but certainly you can't start more than one download at a time: the moment you do it, the previous one will not complete. And they are strangely slow.

I've got the same issue on my MBP of the downloads stopping if I move away. Speeds are incredibly slow too.
