I rarely use imovie, but recently had to do a small project, and wanted to try it out. When finalizing the movie, it has to render, and it seems like it is only using 2 cores, instead of 4. Is this normal behavior, and in other MPs does it use 4 or 8 cores?

AFAIK iMovie is not multithreaded so that sounds about right.

Is there a good list of common applications that are multithreaded?

At least I am not aware of one. This multithreaded thing is very complicated. E.g. in Photoshop, some actions can utilize up to four threads while some are limited to one thread. In general, Adobe has pretty good support for multithreading, especially when compared with Apple.
