I still use a mid 2012 MacPro Cheese Grater for all my photographic image processing. It works great! But I am concerned about whether or not Adobe will continue to support macOS Mojave 10.14.6 as it upgrades it's Photoshop and Lightroom products. Anybody out there with any knowledge about this?

The 2021 apps still support Mojave. I would not expect the 2022 apps to do so, based on previous patterns.
 
As same loyal Mojave user, due better stability than current Catalina, I guess we should move on next year at least on very very last revision of Catalina due software compatibility.
 
I think Adobe will drop Intel rather than a specific OS version, but you have had a good 8 years out that machine and I got a good 10 out of my 2010 Mac Pro. Thats a bloody great life for a computer.

We are still using 2006, 2010(3), and a few 2012(2) here. Add a few 2013(6) hanging strong and of course two 2019s.
Safe to say, these "workstations" will be around for a bit.
