Both Mail.app and Gmail have threaded conversation by default.
In Gmail, if I click the trash icon in a conversation, it trashes all messages in that conversation.
In Mail.app, it only trashes the inbox message. It keeps my sent message from this conversation in the Sent mailbox.

Can this be changed? If I want to delete a conversation it's really annoying to go back and forth between Inbox and Sent.
 
For a Gmail account with Mail.app, go to the "All Mail" folder and delete the conversation from there.

ADD: you might want to double check the Gmail app behavior. Might not be actually moving everything to the Trash, might be leaving copies in "All Mail" (aka Archive). That can be changed in the app's settings to "Trash" vs "Archive".

Sorry I was not clear.

I was comparing iCloud in mail.app, with gmail in the gmail app.

What I’m really looking for is to delete an entire conversation using iCloud in mail.app.
 
I don’t believe there is a way to do what you wish to do with iCloud mail in Mail.app.
 
I found a solution.
- in the inbox view, swipe slightly to to to the left on an email
- click the gray button with three circles
- click show related emails
- click edit and then either move all and choose trash, or select all and click trash in bottom right

Way more clicks than I wanted, but at least it gets the job done.
