From a machine I've been sending emails from for quite a while, I'd like to lift its entire collection of email addresses to go on another Mac. However, all the emails I've previously sent have been manually entered directly into Mail's address field as opposed to from pre-defined entries in Address Book.

Hence, whenever I enter a familiar name, it automatically converts it to the required address but I have no central source from which to extract the address itself (I think). Is there a way that I can take these 'hidden' address entries and import them into Address Book?
 
Yes, with "Previous Recipients".

Open Mail,

Window menu -> Previous Recipients

There's an "Add to Address Book" button.
