Mail Font Making Me Squint...

Hi folks! Does anyone here know how to set the font when composing (both new and replies) mails big enough one doesn't need to squint? I've noticed the more replies I get from an original email, the smaller the font gets and I can't find a way to make it bigger. I blame this on the fact that I'm a Mac newbie and I just need to learn the ways around Macworld... Help please!

Under Preferences click on Fonts and Colors.

Also when composing a quick way to get to the fonts/colors is hitting command+t.
