I'm a new user so I'm trying to stay within apple apps... So the mail looks nice, but I've read it downloads so much content that it takes up huge space vs using Gmail in browser (all gsuite emails) -

Also have seen Spark - does it download and take up huge space also?
 
That is the whole point of using an offline mail client ;) That way you can access all your mail locally when you are not connected to the internet.

Gmail will do exactly the same when you enable offline access...
 
Then there is the idea that when you use an offline-capable email client, you have a backup of your email. (Spark isn't an offline-capable email client, to the best of my knowledge; Mail, Postbox and eM Client are. Make sure you select "Download all attachments and images", and not just the email headers, when you configure the account in the client.)

If you forget your Gmail password, or some other problem befalls your account and you are locked out of it, then you still have your email locally! You can add a new email account to the client and move all of your email to the new account. In my business (computer technician), this happens often enough.
