OK, I am super frustrated!

I have an iMac at home, a MacAir, iPhone 3GS and a first gen iPad. I upgrade both of my iMac and MacAir to Lion so I could start using iCloud (and replace Mobile Me) and also downloaded iOS5 to my iPhone.

I started getting so many duplicate/triplicate calendars. I have two sets of "on my mac" calendars that are home and work and then an @me and an iCloud one. I just want two calendars: personal and work that will be used all across all devices.

I have tried "cleaning" up the calendars, deleting certain ones, etc. I have now somehow permanently deleted my work one (via my MacAir) and then of course it did it on my iPhone and iMac. I don't use Time Machine and have cannot seem to find the old calendar.

So, my issues are:

1. How can I retrieve the iCal calendar I deleted? I have searched and can't seem to find it on any device.
2. How can I determine when I sync that I am syncing the correct ones? I am confused by what the caldav is on the iPhone sync. I want to permanently delete all calendars except one personal and one work (but again, on each computer there is "on my mac" me "@me and on one iCloud)

Hopefully that makes sense!
Any help would be greatly appreciated!!
