Making QuickTime default media player and not iTunes

This is the most aggravating thing.

Is there a way to make ALL media files play with QuickTime by default? Not start playing in iTunes in the background?

I thought at least, if I right click on a file and click "open with Quicktime" and check the box that says "always open with" it would work....

But nope.

How do I do this? You'd think it would be easy to figure out on an Apple product.

Select 'Get Info' and set the default application for all files of the same type.
