I use iFile and/or DiskAid (desktop software) to to go to /var/mobile/Applications. Most of your files and data will be in the Documents folder.

I did this yesterday when I updated, I needed my Angry Birds:D. I just copied everything from the /var/mobile/Applications/xxxxx/ directory to my computer. Then I updated my phone, reinstalled the apps, then copied everything from my computer to the iphone /var/mobile/Applications/xxxxx/ and everything seems to be working just fine with those apps.
