Manually Change Bookmark Icons

How do I change the bookmark icons for each website manually? I've
noticed some of the website icons change automatically in the Bookmarks
bar but others do not.

They care called favicons and are served by the web site. You don't change them yourself. Not all websites use them.

I don't think that's possible. Their specific to the website.
