Got my iMac last week, with the Magic Mouse 2, and after using it for a couple of days I remembered why I stopped using the first iteration of it.

Bought the MX Master, and noticed it's a little laggy, and not as responsive as the MM2.

I'm on El Capitan. Anyone know why it's like this?

Try SteerMouse or USB Overdrive (uninstalling the Logitech drivers, if installed).

Another recommendation for using USB Overdrive as a replacement to the Logitech driver.
Also use the USB dongle instead of Bluetooth if you can.

What are the advantages of using the dongle over Bluetooth? Is it more stable?

It's smoother. There is a massive difference in terms of lag.
