I recently migrated to a Mac Pro after years of running a number of hackintosh systems. I got tired of the effort involved in updates, constant tweaks, and 95% functionality so I picked up a 2009 Mac Pro, flashed it to a 5,1, upgraded to an i7 970 and 12GB of non-ECC RAM, and installed Windows via bootcamp to flash my reference EVGA GTX 680 (02G-P4-2680-KR).

My issue is that none of the GFX sensors show up in Temperature Monitor, Hardware Monitor, or iStat Pro. Has anyone else had similar issues with Nvidia cards in Mavericks? I may load up a Mountain Lion partition this weekend just to see if the problem persists.

This is normal. The GPU fan is controlled by the firmware on the video card. The only indication of how much heat the video card is generating is by monitoring the expansion slot fan. It will be the same in Mountain Lion.
