I want to get an 11" MBA with 8GB RAM / 256GB SSD.

I plan on using it mainly for web browsing and word processing. Will I notice any speed difference between the i5 and i7?

No, I honestly don't think you will. While I will always advise someone to buy as much RAM as they can afford (as that will make a difference to performance), and while I, personally, am a fan of having a large memory, the core speed is a lot less important, especially when the difference between them is not so striking. The i5 should be more than enough for your needs.
