Okay, so its been 2 weeks with a 2013 MBA/11" as my desktop. I used it one week alone, and then one week with the Apple wireless KB, trackpad, and DELL 24" UltraSharp monitor. Still getting used to the DELL, etc., but being a minimalist, I am leaning toward just the MBA and no extraneous peripherals.

I'll give it more time, but I'm finding the resolution increase from my 2010 MBP, its not a lot different and really liking it, regardless.... :D

If I were you, I'd use it with the peripherals... I don't know how you could use a tiny 11" screen as a desktop.

Agreed, I'm so used to my 27" that anything smaller would drive me nuts...as it does when I have to use the Windows 98 computers at high school... :D
 
I have a Mini with the Server app that does my Time Machine backups, Software Updates and VPN. I have a 12TB RAID box connected to the Mini also. It works great for me as I can stream iTunes to my iPad or MBA. If I travel to the cabin I take the RAID box and stream media through the MBA to the ATV.

grab an external HD and possible a monitor for home use.

I will be doing photo editing, and very little video editing(if any). alot of docutment writing and your normal everyday browsing ect. I think ill be ok with this set-up right?

You could theoretically get a Time Capsule or AirPort Extreme and have a hard drive attached to it. That way you could do your backups wirelessly and have it be your general storage. I would advise against this if you need fast data transfer.
 
I have a 2012 13" MBA as my main machine, it serves as a 'desktop' as well at home. External monitor, wireless Logitech keyboard and mouse. Works perfectly for me.
 
I have a modified Mac Pro and a MBA. My MBA is a 2012 model with only the 64GB flash drive. I only use the MBA on the road. When at airports and such I only access the web so the flash drive is sufficient. When at hotels or a friends house I have an external USB 3 hybrid drive with all my files and applications and I also use the Air with the magic mouse that came with the Mac Pro.

While it's no match for my Mac Pro, it's a somewhat acceptable alternative when I'm on the road.
