They might not be a 100% ideal/perfect solution, but M1 (and M2) Macs can actually handle multiple monitors
I have tried it and it does not work. If I use USB-C to HDMI nothing happens at all. If I use HDMI to HDMI the external screen works for about 5 secs then turns off, then radomly turns on for 5 secs every now and then.
The same Multi-port adapter works on my MBP and IPP.
