Yea two of those should work fine.

I don't know anything about memory but, does it make a difference that it says it's single channel, which is unlike the kits I see that say dual channel? Would it become dual When I use two?

makes zero difference. generally, though, you'd want to buy your memory in pairs to remove the chance of memory incompatibility between different manufacturers.
 
Anyone got any 8GB kits from Newegg yet for the new 2011 MBP?

Crucial.com has 4GB modules for $48.99 a piece.

OWC has an 8GB kit for $112.99.

Newegg usually beats them both, but I'm not sure what's likely to play nice with the Mac unless there are lots of reviews where people specifically mention it works with the 2011 MBP. Being the 2011 is so new there aren't any.

Just got Corsair upgrade to 8 GB. Got some nice numbers compared to 4 GB. You can't go wrong with Corsair for the Macbook! http://www.newegg.com/Product/Product.aspx?Item=N82E16820145281
