I checked Apple's website to build my mac and noticed that the memory only comes in 2x2 and 2x4 GB. If I go to a store instead and buy it can I get it with a 1x4 GB memory configuration instead? I don't want to pay around $400 for 4 more GB when I can get it from somewhere like Crucial for about about $50.

If you can fiddle, just buy the cheapest chit possible and search macsales.com for the rest of your needs.

Otherwise I don't think you can go to the Apple store and buy a MacBook Pro with just one 4GB stick. Never know though, call and ask :p

Yea, i dont think you can get them with just 1x4GB stick.
