I am having trouble syncing my notes from my iPhone to my MBP. When I turn on notes in my phone it says I have to create an iCloud email address. Is there a way to sync my notes without creating an email account in iCloud?
Sadly, no. I sent in some feedback at Apple requesting for this to change, but I doubt they'll listen. Notes have been synced with an e-mail address like that forever. The App is new in Mountain Lion, but the system behind it is still the same old.

Did you read the last sentence? It only mentions sync with iCloud. If you're averse to creating an iCloud account then you'll need to find another solution.

What are you talking about? I have an iCloud account. All the other apps that are compatible with iCloud work fine on my devices. Notes is the only app giving me issues. You can have an iCloud account without creating an @me.com email account.
