Ok. Just thought I'd ask. Theoretically I"m guessing that the .mac / .me service is basically a web server that serves as a gateway for your other macs to see each other. So my question – Is it possible to set something like this up on a web server? Has anyone ever looked into this or figured out a way to set it up in OSX?

You're over simplifying things. It's not really simply a web service. Apple had to write client softwares for Mac OS X and also the iPhone.

The mobileme service requires that all 3 of those components work together.
