Initially I thought wow! Press on the messages icon and I am presented with a list of my most recent conversations. Great!

Now I've just pressed it again and 3 random people have been presented. I haven't text these people for months.

Why present them now?

Mine looks like it is just people I talk to frequently.

Mine shows three random conversations. The first one is the first contact I messaged since I got my new phone. I sent one single message by mistake and it's at the top of the list. It also shows two friends I have talked with today but when I get a new message it doesn't even show that. Seems like the least it could do is let me jump to my most recent unread message. :/ Also it seems like it could show contacts I've been interacting with more and not the least active contact in my list as #1.

To make it even less useful, the first contact in the list when I 3D Touch my contacts is someone who a) isn't in my contact list and b) a conversation I deleted in messages. That's not. Dry useful.

Well 2 days later and when I press on the messages app I still have 3 random people showing that I never text. Not really sure how to change them
 
Just deleted the 3 people I don't want in the 3D list by deleting their entire chat conversations and guess what another 3 random ones appear.
Totally useless function.

The same can be said for the phone app. 3 random people. Me being one of them. Totally useless.

In the phone all, yes. It definitely doesn't use any of those. Is there a way to set favorites in messages?

I think the best use of force touch here would be unread messages and recent conversations.

Thanks for that. I see on the phone app it uses my top 3 favourites.

Just trying to work out what drives the messages options.
 
This is going by my 3 most recent conversations with the most recent being at the bottom of the list. The one before that being second on the list and so on.

Definitely not like that for me or my mate.

Pressing the clock only lets you create a new alarm. Not edit an existing one. Stupid

Why do the "new Apple" only half do things.

Mines the same. 3 random people I rarely text have appeared. Yet my wife who I text multiple times per day (and who texts me) doesn't appear at all. As you say useless feature!
 
It looks like the last 3 contacts you messaged via iMessage..... At least on my and my friend's 6s+
