Has this happened to anyone else. Quite often I will be in another app and get a text, as it shows up as a notification I tap it to go to messages and it crashes. Is this a jailbreak problem or just an ios 8 problem?

iPhone Messages app crashing a lot

I can check. I am not currently hiding my messages app but that might make sense.
The only app I am actively hiding is winterboard

I installed Copic just to try it out. It isn't compatible with iOS 8, but I tried it anyway and it crashed my phone app and messages app several times, and was sorta buggy in use. I didn't like the look on my 5S' smaller screen, so I uninstalled anyway, but it wasn't really stable enough (not compatible - so wouldn't expect it to be) for use anyway, imho. Uninstall that, and should be fine.

Oh my bad. Might be an iOS8 problem then. Try pulling down on the notification instead of tapping it, and seeing if that also causes a crash. If it does, then might be some tweak, if it doesn't then seems very specific, and therefore might be 8.0's quick reply interpretation acting wonky for you.
