I would also like to know this...
I am a flight instructor and can use it with students for various instrument training, and I would like to be able to recommend that it is doable on a mac.
I am wondering about the hardware. We mac people are a little behind the curve when it come to hardware or options.

2004 should run fine; I've seen FS X running alright in a virtual machine...this is all provided you don't crank the resolution and display settings up to max, you'll probably sorta have to fiddle with it, but I think doable nonetheless to teach the basics.
