I just installed a Samsung 850 Pro in my mid-2010 MBP, and I want to get your input on it's expected performance. Below is a Blackmagic screenshot. Would you expect better performance?

No.

Your 2010 MBP only has SATA2. Those speeds are consistent with a SATA2 bus.

If you want speeds around 500MB/s or so, stick it into a SATA3 Mac.
 
I'm getting a consistent ~255/265. Ok, just wanted to make sure.

The only question I have is will I benefit at all from Trim Enabler with SATA2?

TRIM keeps the SSD in top condition and keeps the speeds up this will help whatever connection speed you are on.
