Looks like on the recent models you can use both 21.5" and 27" in TDM - Target Display Mode:

Neither. Apple has a Remote Desktop app that I use to log in remotely to different desktops. No sound though.

It depends on the connection I guess. I'm usually in there to run maintenance scripts for work so lag is a non-issue for me.
