I'm running macOS 11.2.1. Any one seeing that minimized windows are missing the preview part of the icon?

I have exactly the same problem, it’s weird that its only affecting a minority of users. Apple doesn’t seem to see this as a priority to fix sadly. It seems to be linked to user account as I share a macbook pro and it only happens to me on that machine. It happens most times my iMac wakes from sleep also.

I still have this problem, anyone know of a fix. Had this issue for a few years now, persists across multiple machines so presumably something to do with my iCloud profile?...

Have you tried toggling the various settings that pertain to the Dock?

The Onyx app has some switches for Dock parameters, also.

A few times. The best way to re-create the image preview is the un-minimise and re-minimise again.

I'll expect I'll be revisiting this thread in another 5 years to again complain about this.

See you in 2031.

Create a new User Account to test. If the new User Account doesn't have the issue there is something in your specific account that is wonking things up.

I have never seen this issue so I thinking it's either an account corruption, a third-party app, or a combination of settings that I've never run across in my experience.
