Switched from an I3 mini to the M1 mini. All went pretty smooth except when I plugged my 32 inch Dell. On the intel Mini my resolution was 3840 by 2160 with a hidpi scaling of 3008 x 1692 60hz, that resolution is now not available any more. The highest HiDPI res is 2560 x 1440, anyone else with a smilier problem? any fixes?

Really strange. You should be able to get that resolution as it falls within the limits specified by Apple (one 6K disply of 6016 x 3384 resolution).
In my case I have a LG 4K monitor with 3840x2160 resolution like you and I can set it to have 3008 x 1692 60hz hidpi but only via thunderbolt not HDMI. In HDMI I have only 2560 x 1440 HiDPI, so maybe this is the problem.
Just to confirm it try going to settings-> monitors and holding the option key (alt) click on scaled. All available resolutions should appear. Or download the app from the app store EasyRes.
Are you using USB-C (DisplayPort) or HDMI?
DisplayPort is the premier connectivity for computers and will generally have the best results. HDMI is a bit of a transplant from the home theater world and is often second-best.
I have the sister to the Dell U3219Q. It's the newly released Dell P3222QE which is very similar to the U3219Q. When directly connected to the Mac Mini M1 via USB-C (cable provided by Dell), it will show 3008x1692 hiDPI at 60Hz. However, if I add a dock (OWC Thunderbolt Dock) it'll only allow 3008x1692 hiDPI at 30Hz. I could get back the 60Hz by changing the Display USB-C prioritisation to Display Resolution on the monitor itself.
What I am curious is, is it possible to set up a HiDPI at 3360x1890 for this monitor? This would mean creating a custom scaled resolution of 6720x3780 (slightly higher than 6K) in an app such as SwitchResX. I have no success in doing this.

I don't believe the M1 machines will support this (nor any custom resolution in SwitchResX, but definitely not exceeding Apple 6K display).
