I usually have Safari, iTunes, Calendar and Mail opened full screen.
Is there a way to sort them in a particular order?
I tried to move the small screen at the top but it won't budge...

Nope, there's no way to do that.

There is a workaround: in System Preferences > Mission Control, make sure "Automatically Rearrange Desktops" is checked. Then click the dock icons of the full screen apps in the order you want them.

For example, if you want Safari, iTunes and Mail to be in that order, then click Safari, then iTunes, then Mail in the dock, in that order.

I guess Apple thought this is better than dragging and dropping, it's way more fun and magical, and it keeps the kids busy as it takes ages to do.

Hi! I think your method will be perfect for my workflow but when I go into System Preferences > Mission Control, I don't have " Automatically Rearrange Desktops" but Automatically rearrange spaces based on most recent use.

The method you have described is much better than lion shuffling things around.
I have the latest software installed!

What may be the problem?
