How does one use so much data easily per a month ?

Unless that does not measure only monthly.

It’s not monthly. Scroll to the bottom and you can see when the data tracking started.

I kinda wish there was a built-in way to automatically reset the counters monthly. Iirc, even if you create a shortcut, it still requires manual confirmation for this specific task.

Unsure about other carriers but with T-Mobile you can select your SIM under Cellular and at the bottom it shows current usage...
