I tried to upgrading MacOS Catalina to Big Sur on my external disk (Samsung T5) in yesterday and it went well. Overall, Big Sur feels very stable.

So I plans to going to install Big Sur on my internal disk. To my question, on the internal disk I have MacOS Mojave. Do I have to upgrade to Catalina first before upgrading to Big Sur?

No you don´t need to have Catalina.. I installed from my Mojave Macbook air (2015) to an external WD ssd. I guess it wil go very well to install on your internal ssd running Mojave.
