If I buy the mac mini, would it be possible to hook up two HP 2009m monitors?

If so, what's the best way to do so.
 
If they have HDMI or DVI, yes. Just buy the appropriate adapters (either one mDP->HDMI or one HDMI->DVI adapter, as a mDP-DVI adapter is included).
