As far as I know there is no setting in iOS that allows you to switch to mono output on the itouch, so I was wondering if there was any app(jailbreak or not) that would allow me to access my music and play it with a mono output.

I don't have my iPod Touch anymore, but have you tried looking at where the setting is located on the iPhone (at least on iOS 4)? On my iPhone it's under Settings -> General -> Accessibility -> Mono Audio

Can't believe I missed that!!

I missed it for a long time, too. I did find that if you have a cable with a mono 1/8" jack on it, the iPod will sum the left and right channels and output in mono.

I'm so wonder taht why do you need mono audio? I think stereo is great.

The thing I ran into was that I needed to run my iPod into a mixing console for a system where the house mains ran in mono. I had a single DI box and a single channel. If the iPod was outputting in stereo, I would have only gotten the Left audio and on some music, that would have been disastrous.

Another common reason (not experienced by me personally, yet) is that someone who has significant hearing loss in one ear would want mono sound. That way, if let's say the drums are panned hard to the right but the person can only hear out of their left ear, they could still hear. Mono output will sum the right and left channels together (well, it should -- and does on the iPod).
