Upgraded today to Monterey 12.0.1. and now my AW (S5, watchOS 8.1) is only sporadically unlocking my iMac.
Did work with BigSur 11.6.1 until yesterday without a problem.

When I toggle in System settings, only the next unlock with AW is working. After that, nothing.

Tried the best practice advice with deleting entries in keychain settings, but that did not help.

Anyone seeing the same issues with Monterey or do I have to dig deeper?

I’d restart Mac, iPhone and watch.
If that doesn’t help I’d contact Apple via chat or phone

When I did the initial update to Monterey, I felt my AW was sporadic to unlock, too.
However, I then did a full 'Restart', and after the initial log in, it seems to work as expected.

PS: It was the same issue on my Mac Mini M1, and my MBA Intel.

sorry ... what Mac model? did you do an upgrade or a clean install?
Contact Apple, make sure you get to 2nd level support ... I am guessing that they might suggest to unpair/re-pair the watch which is a p.i.t.a. process

iMac 2019. Did a clean install and used Migration Assistant from Time Machine backup.

Did a Bluetooth config reset now too. Unpairing the AW is too painful for the moment.

Apple support was not really a good experience in the past.

I probably live without AW unlock for the moment. Seems to be an area where Apple has a multitude of issues sadly.

Found a thread on Apple support forums. Seems I am not the only one with this problem. Hope Apple will fix it.
Is there a place where I can submit a ticket? Only remember a feedback form and not sure if there is a receiver.

I have noticed that it’s more sporadic for me, too. It works most of the time, but it occasionally doesn’t.
